Craving an easy yet special late-autumn/winter burger? Pan-fry the tofu-wakame patties in a little oil until golden brown, then, in the last seconds in the pan, brush them lightly with soy sauce and maple syrup (or agave syrup). This creates a fine, glossy umami glaze. Serve them in a lightly toasted wholegrain or brioche-style bun with lamb’s lettuce or arugula, a few thin cucumber slices, red onion rings and a quick vegan lime-sesame mayo (stir vegan mayo with lime juice, a little sesame oil and toasted sesame seeds). Oven-roasted vegetable cubes (e.g. pumpkin, sweet potato, carrots) make the perfect side. You get a warm, satisfying yet light meal that you can easily prepare ahead when you have guests.
